Santa Fe Chicken
4 Chicken breast cut into pieces
1 med onion chopped
1 clove garlic, chopped
1/4 bell pepper, chopped
1 Can Ro-Tel
1 can cream of chicken
1 can water
1 1/2 c minute rice
4T. butter
1/2 c grated cheddar cheese
Saute' chicken in butter about 5 mintes. Add onion, garlic and bell pepper. Saute' until soft and chicken is cooked. In bowl, mix Ro-Tel, soup, water and rice. Add chicken mixture. Mix well. Pour into greased pan. Top with grated cheese and bake for 30 minutes at 350.

Life is a Flip!
So today I realized that life is like a flip. You have to twist and turn and even bend a little.
The day started out like any other. Started out with a little coffee, followed by my daily reading of the Bible. After having double foot surgery this summer, I feel like my life is a little out of control. I can't walk very long or very well. Not to mention, as a mom, I feel like I can't run and play with my kids like I would want to, and needless to say, sometimes I just feel like I can't do things 100%.
But what I have learned today is to be grateful for my life. As my father in laws cousin lays in the hospital fighting for her life, and a tree falls and puts 2 holes in a roof in out rental property... I learn that in life you have to be able to FLIP! I don't mean flip out but what I do mean is that we need to appreciate every moment of our life. We need to be able to let the cards fall where they may and know that God does not give us more than we can handle. My favorite saying is "The will of God will never take us where the Grace of God will not protect us".
I know.. easier said than done. But today my life's blessed moment is realizing that life is short and I need to be able to flip and bend like the gymnast that I used to be.
Deuteronomy 7:9 Know, recognize and understand therefore that the Lord your God, He is God, the faithful God, who keeps covenant and steadfast love and mercy with those who love Him and keep His commandments to a thousand generations.
